Frozen Yogurt Bark
This frozen yogurt bark combines creamy Greek-style yogurt with juicy blueberries, strawberries and crunchy pistachios. Simple to prepare and fun to break into pieces, it’s a colourful frozen treat for the whole family to enjoy.
Ingredients
- 500g fat-free Greek style yogurt
- 1 teaspoon vanilla extract,, optional
- 100g fresh blueberries
- 100g fresh strawberries, hulled, cut in half
- 30 shelled pistachios, roughly chopped
Optional toppings:
- Prepared granola
Method
- Line a shallow baking tray or dish with baking parchment paper.
- In a medium to large mixing bowl, add the yogurt and vanilla extract and stir well to combine.
- Pour the yogurt mix into the lined baking tray or dish and spread out evenly over the parchment paper.
- Sprinkle over the fresh fruit and top with the pistachios. Add any additional toppings too.
- Transfer the tray or dish to the freezer and freeze for at least 3-4 hours, until completely frozen.
- Remove from the freezer and lift the baking parchment paper from the pan or dish and peel away from the frozen yogurt.
- Break into pieces and serve immediately or store in an airtight container in the freezer until ready to enjoy.
If you prefer a more brittle and dense bark, add 200ml milk to the yogurt.
