These easy smashed lamb pittas are topped with herby lamb mince and cooked until deliciously crisp, then served with a colourful crunchy salad and cooling tzatziki. Ready in around 30 minutes, they’re a fun and balanced midweek meal the whole family will love.

Ingredients
  

  • 300g lean lamb mince (10% fat)
  • 1 small red onion, peeled and grated or finely chopped
  • 2 teaspoon dried mint or oregano
  • 2 tablespoons freshly chopped parsley
  • 1 whole egg
  • 4 standard wholemeal pittas
  • light cooking oil spray
For the salad:
  • 200g green salad leaves (), 50g (),
  • 2 medium carrots, peeled and grated
  • 50g cherry tomatoes, quartered
  • ¼ medium cucumber, sliced
To serve:
  • 2 tablespoons prepared tzatziki

Method
 

  1. To prepare the salad, in a medium bowl, toss all the ingredients together, cover and set aside.
  2. For the lamb topping, in a large mixing bowl, put the mince, red onion, dried herb, and most of the parsley (saving a little for garnishing) and the whole egg. Season with black pepper and gently mix well with a large spoon to combine.
  3. Lay each pitta onto a chopping board and divide the mince mixture over evenly. Flatten the mince mixture with the back of a spoon to cover each pitta.
  4. Spray a large non-stick frying pan generously with the cooking oil and warm over moderate heat for a few seconds until hot. Carefully add two pittas to the pan, mince side down and cook in batches for 3-4 minutes on one side.
  5. Gently flip the pittas over and cook for a further 3-4 minutes until the pittas are crispy, and the lamb is cooked through.
  6. Garnish the pittas with the remaining parsley and serve with a spoonful of the tzatziki and the salad.
